Cabernet Sauvignon / Merlot is one of the most successful pairings in wine — adopted far beyond Bordeaux, its original home. Napa Valley, Tuscany (Super-Tuscans), Chile (Maipo, Colchagua), Coonawarra, Stellenbosch: each region has its own reading. Cabernet Sauvignon brings the tannic backbone and aromas of blackcurrant, cedar and tobacco; Merlot softens the profile with roundness, ripe plum, a velvety texture and earlier drinkability.
A wide bowl, slightly incurved at the rim, is designed for this kind of structured wine. It aerates the tannins, frees complex aromas and focuses the finish. It suits a young, fruity blend as well as a more oak-aged wine built for the cellar. Serve at 16–18°C, ideally after a light decant for young or tannic bottles.
